Picked on September 25, 2024 and sorted at the winery. Crushed into small fermenters and macerated for 5 days total with twice daily punchdowns. Pressed and racked into barrel post fermentation for elevage in old barriques for 7 months. Bottled April 6, 2025, 260 cases produced. Unfined, unfiltered and 25 ppm total SO2 at bottling.
